Viña Concha y Toro’s Center for Research and Innovation participates in a conference of digital transformation and innovation

The Industrial Internet of Things (IIoT) was the main focus of the event that took place in May and brought together experts from different industries. Leaders discussed - in more than 50 conferences - strategic industrial and technical solutions to face the new challenges of IIoT, artificial intelligence and blockchain.

José Cuevas, R & D leader and Innovation in Engineering of Viña Concha y Toro’s Center for Research and Innovation (CRI) spoke about the digital technologies used for the optimization of processes, mainly in the planning of vintage and vinification.

“Among the digital technologies we address is artificial intelligence, through the development of predictive models based on machine learning for the management of wine quality during harvest programming processes, and reception of grapes and alcoholic fermentation in the winery; big data, through the application of storage tools and processing of important volumes of chemical, operational data and sensory analysis of wines; and IIOT through the interconnection of sensors, control systems, fermentation ponds and cloud systems for the application of data analysis and process management platform” Cuevas said.

The R & D leader also highlighted that as CRI they currently have a pilot scale IIOT infrastructure and a prototype platform for the management of grape harvest planning processes that can be scaled industrially as of 2020.
