For five days, the main actors of the wine industry were summoned to Punta del Este, Uruguay to celebrate the 41st version of the Congress of Vine and Wine. In this instance, where the representatives of the OIV (International Organization of Vine and Wine) appointed by each country meet, advances, new data and innovations are presented.
Viña Concha y Toro´s Center for Research and Innovation (CRI) was also present. Sergio Manzano, Winemaker of the Experimental Cellar, presented in front of around 600 people of different origins, on the “Evaluation of the active ferment propagation system on the fermentation and quality of the CV Carmenere”.
This year, the oenological works focused on the replacers of sulfur dioxide, low alcohol producing yeasts and measurement techniques to control process adulteration and origin denomination.
“I think this is a good instance, where the representatives designated by each country sit down to discuss the legislation that governs the associated countries. Through worktables that function throughout the year, it seeks to accept new processes and products associated with wine and winemaking”, says Sergio Manzano.
On the occasion, the general director of the OIV, Jean-Marie Aurand, presented a global balance of the wine sector, which highlights the shift of wine consumption from traditional markets to new poles. The United States leads the list of largest consumers, followed by France, Italy, Germany and China.
